Why pre-order (2 days before) ?

  1. When you have special flavor, you'd better order online 2 days in advance. We bake every morning, but NOT every flavor. We are going to make a dough only for you, NOT for mass-production.
  2. Usually it takes 1 or 2 days to ferment mother-starter and 3 days to ferment main dough, so we need overall 4-5 days for fermetation. To specialize in each customer's taste, we need at least 2 days fermentation period in advance.

How to bake Moses’ bread?

It takes four days to get seed-culture(creating mother-starter).
Barm (so-called mother-starter) should be kept at least one night in the refrigerator.
Firm starter from barm also should see next morning in the refrigerator.
Then we can make main dough, and then one night in the refrigerator
Next day we do dividing, rounding, benching, shaping, proofing,
And then one night in the refrigerator for fermentation.
We bake next morning.
